Going to a wider (and heavier) tire on such a light and nimble bike would cause some negative performance attributes that outweigh the "it looks better" factor, in my opinion.

I only noticed that after you mentioned it! I was trying to get the sun peeking over the wall. The angle of the tip matching the line of the tire is just an added hidden bonus. Nice eye to catch that!

Ahhh, so you're talking about the main "permanent" baffle, not just the removable "db killer baffle". Got it now. :)
Once I saw the polished tip option for the Coffman, that's what got me to buy it.
Actually, I found the baffle can be removed easily without damaging it by using a snap ring (or retaining ring) pliers . I removed mine, but don't forsee putting it back in, unless I did more exhaust work and needed it to be quieter.

I'm typically getting as low as 57mpg and up to 70mpg. Most often in the mid 60's. I usually refill between 100-120 miles traveled between fill ups. Over 5000 miles, I think I've only put in over 2.0 gallons just once, despite being 0 on the distance remaining and blinking fuel bar...
I don't want any risk of the tire hitting the plate under full suspension compression and ripping off the plate and probably damaging the tail section/light. So I'm fine with keeping it at an angle that still allows it to be visible for legal purposes.
