Rough idle, oil consumption, engine shut off issue

Hey everyone,
New to the forum. Tried searching around for this issue I'm having but couldn't find anything. Sorry if it's been posted/solved before.

The Problem:
2023 Vitpilen 401 (~2800 miles)

I got stranded on the road this weekend. As I was riding 2-3 gear at ~35mph, the throttle was very jerky, almost like the engine was struggling to stay running. At one point the engine light was blinking but went away after about 10 seconds.

I pulled over and the RPMs were jumping up and down between 1.5-2.5K. As I was trying to limp it home, it went back to normal but then started happening again. Decided it was best to pull over for good and have someone pick me up. I tried turning it off and on a few times and it died on a couple of attempts.

More Context:
Earlier in the week, I noticed the oil was low. Filled it back up to normal. After this issue, the oil is low again. Naturally I checked around the engine for leaks and watched the exhaust for smoke and didn't see anything.

Findings so far:
After searching around, I found that the spark plug might be an issue. I got to the plug but couldn't pull it out due to the socket not being long enough. But, I saw some oil pooled around the spark plug as it was sitting in the engine. My guess is that is a big problem, right? Checked the air filter too and that seemed to be fine.

I've searched all over without a clear answer. Any help would be much appreciated!
 
If your 2023 happens to be still under the 2 year warranty then I would take it back to the dealer and not mess with it.

There definitely should not be oil around the spark plug so there is either a gasket leak or something more major.

How much oil did you need to add?

Yeah planning to take it over to the dealer this week. Should be under warranty still.

Added about 1/3 of a quart.
 
Update:
Bike is fixed.

Summary of repair notes:
Mechanic took the bike out and had the same issue with higher RPMs. Bike stalled a couple of times. They checked/fixed the following:
- Fuel pressure - Good
- Spark plug & cylinder leak down - Good but installed a new spark plug
- Valve measurements - Not good, intake and exhaust valves out of spec measurement and readjusted
- Chain tension - Good, no tight spots (excessive tight spots can amplify at low speed)
- Re-intialized ECU learned values

All done under warranty.
